Pancake Day! Corn, Feta, Avocado and Maple Bacon

Pancakes, yum yum. Yesterday was Shrove Tuesday! I went straight to my friend’s house after a long day at uni.

We made Jamie Oliver’s brunch pancakes, but also added 2 shredded zucchinis into the batter. We also crisped up some bacon on a pan, then transferred it onto a baking tray, drizzled some maple syrup on top, allowing the maple syrup to caramelise and  further crisp up in the oven.
