Chocolate and Lemon Chia Seed Pudding

I’ve been wanting to buy chia seeds for quite some time after reading so many articles and watching videos about its health benefits. Yesterday I finally hit a local health food store, bought myself a small bag of white chia seeds and made some chocolate and lemon chia seed puddings.

Chia seeds are packed with fibre, omega-3, antioxidants and a wide range of other good stuff. Don’t worry; I won’t bore you on all the details.

I found that a lot of recipes on the internet encouraged people to eat large amounts for breakfast, more than the recommended daily intake (15g/day). I was determined to search for a recipe that was more sensible. As a result I found one from The Chia Co. which served them in shot glasses. I think these portions are just perfect, ensuring that you don’t over eat while still enjoying the benefits of this super food.

Chocolate chia seed pudding

– Serves 2

Ingredients

  • 2 tablespoons chia seeds
  • ½ cup almond milk
  • 1 tablespoon honey (add more if desired)
  • ½ tablespoon cocoa powder
  • ¼ teaspoon vanilla extract

Directions

  1. Pour all of the ingredients into a medium sized bowl.
  2. Stir and whisk until all combined with no lumps. Mix the bowl every 5 mins for 15mins. The pudding mixture should thicken.
  3. Pour into shot glasses or espresso cups.
  4. Cover each glass with cling wrap and refrigerate for at least 2 hours
  5. Serve with fresh or dried fruits, nuts or shaved chocolate or enjoy as it is.

Lemon chia seed pudding

– Serves 2

Ingredients

  • 2 tablespoons chia seeds
  • ½ cup almond milk
  • 1 tablespoon honey (add more if desired)
  • 2 tablespoons lemon juice
  • zest of ½ a lemon

Directions

– Follow the same directions as the chocolate chia seed pudding recipe above.
